This Keto cocoa powder chocolate loaf cake is really good to have on hand when you need your chocolate fix. There is no chocolate in this recipe, you will only need unsweetened cocoa powder to give this bread the chocolate flavour. I love it with my morning coffee!
Ingredients in this recipe
Butter: I use Grass-Fed Butter baucause of its good nutrients and high amounts of healthy fats.
Xylitol: I find Xylitol works really well in loaf cakes. Important: If you have a dog, be careful when using Xylitol as it’s highly toxic to them!
Egg: I always use organic eggs. For best results, have your eggs at room temperature when making your loaf cake.
Liquid Stevia Glycerite: I recomend using pure stevia with no chemicals in it.
Almond Flour: I like to use extra fine ground almond flour.
Cocoa Powder: I use unsweetened cocoa powder. You don’t want your cocoa loaded with sugar.
Non-Fat Dry Milk: it gives structure and enhance texture. It is said that whey protein can be used instead, but I didn’t try it myself. If you try it let me know how it goes!
Tapioca Flour: Also known as Tapioca starch. It gives this loaf cake a lighter less grainy texture.
Potato Starch: It acts as a binding agent and just 1/4 tsp gives this loaf cake a super moist texture.
Xanthan Gum: really important in gluten-free baking. I found a really small amount goes a long way.
Baking Powder: I recomend using aluminium free baking powder.
Salt: I use pink Hymalayian.
Milk: I use organic milk.
Vanilla: It is really important to use a high quality vanilla extract in your recipes for best results. I personally recomend using vanilla extract instead of vanilla essense.
How to make keto cocoa powder chocolate loaf cake
Preheat the oven to 350 °F (180 °C)
Mix almond flour, cocoa powder, dry milk, tapioca flour, xanthan gum, baking powder and salt in a bowl and set aside.
Beat the room temperature butter and Xylitol for a few minutes until pale yelow.
Add the egg and mix until well combined.
Mix in the Stevia and Vanilla.
Pour in the dry ingredients and mix well.
Add the milk one Tbsp at a time, mixing in between each addition.
Pour the batter in the prepare loaf cake pan.
Bake for 20 to 24 minutes or until a skewer inserted in the middle comes out clean.
Let it cool in the pan for 10 minutes and transfer to a wire rack to cool completly.

Can I use Coconut Flour instead of almond flour?
No, you can’t replace the almond flour for coconut flour because you need the moisture of the almond flour in this loaf cake. Coconut flour would have a drying effect, it is particularly absorbent and may tend to make this loaf cake or any baked good dry.
Is cocoa Keto friendly?
Yes! Cocoa is keto friendly as long as you get the one without any sugar in it. Cocoa and Cacao both are super high in fiber, this makes it super low in net carbs.
Is Cacao and cocoa the same thing?
They are both very similar. Cacao powder is higher in fiber, magnesium, iron and protein. But it is also more expensive. If you get the cocoa powder with no added sugar is still nutrient dense and is a more affordable option.

You can store this Keto chocolate loaf cake in an airtight container over the counter. It will keep moist for 2 to 3 days. This loaf has a great texture and is still really good after a few days.

This Keto cocoa powder chocolate loaf cake can be turn into dessert by adding some whipped cream and berries. It is super moist and has a soft texture. If you are feeling extra indulgent you can also add some keto friendly chocolate sauce. Yum!
This easy chocolate loaf cake is Gluten free and low carb. It's great as it is quick to make and really good when you are craving something chocolatie. I love it with my morning coffee or a cup of tea.
Beat Butter and Xylitol for 1 or 2 Minutes until pale yellow.
Add the egg and mix to the creamed butter and sugar and mix until combined (it may look curdle don't worry it will come together when adding the next ingredients).
Add the vanilla extract.
Add the dry ingredients mix (almond flour, dry milk, tapioca flour, potato starch and salt)
Mix well until combined.
Bake the loaf for 20 to 23 minutes or until a skewer inserted into the center of the loaf comes out clean. Cool the loaf in the pan for 20 minutes, then turn it out to cool completely on a wire rack before slicing.
