Low-Carb Seed Brittle Clusters (Nut-Free)

These are crunchy and super tasty, a great snack to have when you just need something sweet, with all the health benefits of seeds.

Ingredients
  

  • 3 Tbsp Pumpkin seeds
  • 1 Tbso Sunflower seeds
  • 1 tsp Sesame seeds
  • 1 tsp Coconut Sugar
  • ½ tsp Honey
  • ½ tsp Hot Water
  • tsp vanilla extract
  • pinch of Salt

Instructions
 

  • Preheat your oven to 180°C / 350°F
  • Mix coconut sugar, honey, and hot water, and vanilla extract.
  • Add all the seeds and mix well until combined
  • Use a tsp to arrange the mixture into small clusters over the baking sheet with parchment paper.
  • Bake for 10 minutes or until golden brown.
  • Take them out of the oven and let them cool completly before trying to peel them off the parchment paper.
  • Store them in an airtight conteiner at room temperature.
